Description:
Derek Poirier is the Corporate Pastry Chef for Valrhona USA. He teaches and conducts demonstrations in the USA, Canada and France, at the famed Ecole Du Grand Chocolat in Tain LHermitage for an international clientele of pastry professionals. He has competed internationally and is currently serving as an advisor to Team USA, preparing for the Coupe du Monde de la Patisserie competition in Lyon, France in January 2009. In this hands-on class, Chef Poirier will inspire you with Valrhonas elegant style of dessert presentation, which combines creativity, expertise, intense flavors and flair.
