Description:
TECHNIQUES OF CHOCOLATE 1 This series will teach you how to work with chocolate like a professional. All the latest techniques for melting, tempering, dipping, and molding will be covered. Youll learn to make all sorts of confections, from simple nut clusters to chocolate-coated almond butterscotch and fancy truffles dipped and molded confections. Each course consists of three five-hour classes. Courses in this series must be taken in sequence. Chocolate 1 1 Chocolate nut clusters; chocolate-enrobed fruits; fantasy barks. 2 Grand-Marnier truffles; bourbon truffles; ginger truffles; passion fruit truffles; espresso truffles. 3 Chocolate caramels; old-fashioned almond buttercrunch; chocolate-covered caramel almonds.
